“We should really start offering toast with good stuff on it.” I’m pretty sure that’s how it all started. My husband, Michael & I often eat a lot of bread. Focaccia on the stove, eggs on top, a good garlic spread, throw on some greens & sprinkle that everything spice! Or, sesame semolina, date & almond hummus from the SPA co-op, sharp cheddar cheese & black sea salt. These kind of snacks are the go-to in our household. Oh wait, can’t forget my absolute favorite -- Fig Fennel Hazelnut, goat cheese & honey. GAH. That’s what I’m taking with me the next time someone asks “If you were on an island and could only eat one thing, what would it be?” Actually, it used to be french fries or barbecue chips, but I think I’m switching it, like right now.

Presley replied, “Why don’t you make it 10?” I was putting away sourdough loaves in the back corner of the bakery, crouched down, bottom rack, and said quietly to myself “Sell it girl, sell it.” I THOUGHT I said it quietly, but the big guy said “Did I just hear someone say sell it girl, sell it?” He immediately laughed so loud. Did you know that more than half of our flour is sourced locally right here in Wisconsin? Meuer Farm, located in Chilton, WI supplies the whole grains we use in our baked goods. We currently use their spelt flour, rye, and whole wheat. We are so fortunate to have them sustainably growing grains in our area! Since day ONE!

Since day ONE!

Did you know we have been making oatmeal cream pies since day ONE? Like February 11, 2011? Which means, we’ve been scooping oatmeal cookies & mixing up honey buttercream for 8 years. EVERY. SINGLE. DAY. That’s a lot of cream pies.

When I was a kid, my dad would wake up my sisters & I early on Saturday mornings. “Psssst, I’m going to the gas station. Wanna come with?” For him, it meant drinking black coffee with my grandpa + a bunch of buddies right next to those moving slushy machines. For us, it was a whole different story. We got to peruse the candy aisle, look at gas station gadgets, check out that blue slush puppy machine, and eventually we got to pick out a treat (the highlight)! I would either go for the little Debbie oatmeal cream pies, or a whatchamacallit candy bar. And that was that. So simple, but so memorable.

Our latest & greatest is the FOCACCIA bread!

We’ve been making regular focaccia for Red Eye Brewing Co. in Wausau for awhile now. They use this savory bread for their “beets me” sandwich with beets (obvs), avocado, asiago, arugula, & tarragon aioli - YUM. It’s so good! I deliver their bread every Monday, and if I’m lucky & have the time, I’ll pull up a seat at the bar. “I’ll take the beets me sandwich, and a Red Eye Skyrocket Stout please.”
